Avocado Falafels 🥑

Ingredients

  • 1 can of chickpeas (rinsed, drained and patted dry)
  • Fresh parsley, chopped
  • 4 cloves garlic, minced
  • 2 medium shallots, minced
  • 2 tbsp sesame seeds
  • 2 tsp cumin
  • 1 tsp black pepper
  • ½ tsp salt
  • ¼ cardamom
  • 3-4 Tbsp all-purpose flour
  • 3-4 Tbsp olive oil for cooking
  • Bread crumbs for coating
  • Sesame seeds for coating
  • 2 Ripe avocados

Instructions

  1. Add chickpeas, parsley, shallots, garlic, sesame seeds, cumin, salt, pepper and cardamom to a food processor or blender and mix/pulse to combine, scraping down sides as needed until thoroughly combined. You’re looking for a crumbly dough, not a smooth paste.
  2. Add 1 Tbsp of flour at a time and pulse/mix to combine until no longer wet and you can mold the dough into a ball without it sticking to your hands.
  3. Transfer to a mixing bowl, cover and refrigerate for 1-2 hours to firm up.
  4. Chop avocados into small balls and mould mixture around avocado into balls.
  5. Sprinkle on bread crumbs and sesame seeds.
  6. Fry in olive oil on medium heat for 4-5 minutes, flipping when the underside is deep golden brown.
  7. Enjoy.
